Well, maybe Devil’s Food.
I decided to make a cake yesterday to take to our son and daughter-in-law’s home. We were celebrating Mother’s Day a day early (just like our Easter celebration). I wanted a chocolate cake so decided to make Rosie’s Southern Devil’s Food Cake. The cake went together great and the batter tasted delicious!
“Fudge”, that’s what I said when I turned the pans over to release the cake.
One of the layers stuck to the pan and I thought it was ruined.
I knew I wanted to make one of my old, favorite frosting recipes, MOCK WHIPPED CREAM FROSTING, so I hoped I could still make the cake look attractive.
It worked! and the cake was really good.
Moist, chocolatey yumminess.
A great texture, not dry and so rich.
I'll make this cake again.

Mock Whipped Cream Frosting
3 Tablespoons Cornstarch
1 ½ cups milk
1 Tablespoon Vanilla
1 ½ cups sugar
½ cup shortening
¾ cup butter, softened
Mix cornstarch and milk in a small saucepan. Cook over medium heat until thick. Set aside to cool.
In the bowl of a mixer cream butter, shortening and sugar on medium-high until light and fluffy and sugar has dissolved. Mixture should not feel gritty.
Add the cooled milk/cornstarch mixture to the sugar mixture and beat until incorporated. Add vanilla and beat until fluffy.
Frost cake to cover all imperfections.
And speaking of fudge...my daughter-in-law dropped by this afternoon with roses and a plate of fudge. Now how ironic is that? I had already decided on my title for this post even before she came by.
