When Bad Things Happen

OK, so this happened on my way home from Target today.
The traffic in front of me stopped abruptly and so did I.
The person behind me did not.

I felt so bad for was her first accident.

I came home and baked a cake.
That's what you do when bad things happen, right?

I needed to use some of the rhubarb I picked yesterday from the garden.

Mary Ann’s Rhubarb Cake

  • 1/2 cup butter
  • 1 1/2 cup white sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 t. vanilla
  • 2 1/2 cups flour
  • 3 cups chopped fresh rhubarb
  • 1 cup brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup butter
  • 1 cup sugar
  • 1 t. vanilla
  • 1/2 cup evaporated milk

Preheat oven to 350’F. Mix first 8 ingredients in a large bowl. Beat well. Fold in rhubarb. Place in a lightly greased 9x13" cake baking pan. Before baking, top with brown sugar and pecans. Bake cake for 45 minutes. Mix the last 4 ingredients in a saucepan. Heat until dissolved and thickened slightly. Pour over baked cake immediately when it comes out of the oven. Allow cake to cool slightly. Serve warm with Cool Whip or sweetened whipped cream. Keep cake refrigerated if there are any leftovers.

This is not Paleo, but it will soothe my anger at the anticipated hassle that will be happening over the next few weeks.

Sorry about your car but yes cake does make everything better. My husband loves rhubarb, I will have to give this recipe a try.

Sorry about the smashed up car- saw it on IG but didn't think it was appropriate to "like" it!! I hope the cake soothed the senses somewhat! Will there be a hassle with insurance or is it more being without the car while its repaired?

No, baking a cake is the last thing I should try after an accident!! It would end up in certain death for the cake and several other people.
Glad to hear no one was hurt.

Oh bless, that's annoying, but at least it was only a little ding, and you are still ok, that's the most important thing. Enjoy your cake, hope it makes some of the hassle more bearable!! :o)

If you get bumped from behind it is automatically the other person's fault in the UK, hope there is not too much wrangling.
Just think, if you are house-bound whilst it's being fixed, there will always be sewing!

oh man! it happens, but its always a bother. thank goodness no one was hurt. cake seems like the best way to deal with it.

I wish I had thought to bake a cake the other day when my daughter was in ANOTHER accident. Like yours, no one was hurt. So incredibly frustrating. Nope, I didn't bake but I didn't eat either! I shopped...uh oh!

Grrrr. Every morning I drive past motorway gantries saying 'frustration causes accidents' and 'keep a safe distance' and yet every day I seem to have people driving up my exhaust! Even if you leave a safe distance to the car in front, people like to fill that up too! Glad you were okay though, and cake seems like a plan!

I had such a horrendous customer service experience this week that I come home and made brownies and eating them did in fact make me fee better! Hope the cake helped and glad you were ok :-)
